- Prepare the cherries:
- Mix cherries with sugar and let them rest for 30 minutes. Simmer briefly until slightly softened.
- Cook the rice:
- Wash and soak rice, then parboil and drain while grains are still firm.
- Prepare meat (optional):
- Make small meatballs and fry until golden.
- Layer the rice:
- Add oil and tahdig to the pot. Layer rice, cherries, cherry syrup, and saffron. Repeat.
- Steam:
- Cover and cook on low heat for 45 minutes until fully steamed.
- Serve:
- Garnish with nuts and serve with chicken or meatballs.
