Ingredients

  • 3 cups basmati rice
  • 3-4 cups sour cherries pitted, fresh or frozen
  • 1/2 to 1 cup sugar adjust to taste
  • 3 tablespoons brewed saffron
  • Salt as needed
  • Oil or butter as needed
  • Optional Toppings
  • Chicken or meatballs
  • Slivered pistachios or almonds
  • Butter for final aroma

Method
 

  1. Prepare the cherries:
  2. Mix cherries with sugar and let them rest for 30 minutes. Simmer briefly until slightly softened.
  3. Cook the rice:
  4. Wash and soak rice, then parboil and drain while grains are still firm.
  5. Prepare meat (optional):
  6. Make small meatballs and fry until golden.
  7. Layer the rice:
  8. Add oil and tahdig to the pot. Layer rice, cherries, cherry syrup, and saffron. Repeat.
  9. Steam:
  10. Cover and cook on low heat for 45 minutes until fully steamed.
  11. Serve:
  12. Garnish with nuts and serve with chicken or meatballs.
