Step 1: Prepare the beans
Soak the beans overnight in water to reduce bloating and help them cook faster. Drain before using.
Step 2: Fry the herbs
Finely chop the herbs. In a large pan, fry them in oil over medium heat until dark green and aromatic avoid burning. Proper frying is key to the perfect flavor.
Step 3: Cook the meat
In a separate pot, fry the chopped onions until golden. Add the meat and turmeric, then stir until browned and fragrant.
Step 4: Combine ingredients
Add the fried herbs and beans to the pot. Mix gently and pour enough boiling water to cover the ingredients by about an inch.
Step 5: Add dried limes
Pierce or halve the dried limes and add them to the pot. They release a sour aroma that defines Ghormeh Sabzi’s unique flavor.
Step 6: Simmer patiently
Cover and cook on low heat for 3-4 hours until the stew thickens and the oil rises to the surface. Adjust salt and seasonings before serving.
