Ingredients
  

  • 1 liter full-fat milk
  • 300 g sugar
  • 1 tbsp thaaleb salep
  • 3 tbsp brewed saffron
  • 2 tbsp rose water
  • 100 g full-fat cream
  • Pistachio slices as needed
  • Almond slices optional

Method
 

  1. Mix thaaleb and sugar thoroughly to prevent lumps.
  2. Warm the milk over low heat without boiling.
  3. Gradually add sugar mixture while stirring continuously.
  4. Add saffron and rose water once thickened.
  5. Let the mixture cool completely.
  6. Freeze and stir every 30-45 minutes, 4-5 times.
  7. Add cream and pistachios, then freeze until firm.
