In a large bowl, mix flour, egg, and salt. Gradually add water to form a soft dough. Knead for 10 minutes, cover, and rest for 15 minutes.
Slice onion and fry in a pan until golden; set aside.
Boil the meat in a pot with 3 cups of water, salt, pepper, and turmeric until tender. Separately boil potatoes and carrot.
Roll out the dough, cut into squares/diamonds, and cook in salted water or broth for 10 minutes.
Place noodles on a serving platter. Top with cooked meat, carrots, and potatoes. Add fried onions and garnish with herbs. Serve hot with broth on the side.
