Beshbarmak Recipe (Bashbarmak)

Beshbarmak, also known as “five fingers,” is the national dish of Kyrgyzstan. Made with tender boiled meat, homemade noodles, and rich broth, this hearty recipe is a symbol of Kyrgyz hospitality and tradition.

Ingredients
  

  • For Noodle Dough:
  • 500 g flour
  • 250 ml water
  • 1 egg
  • Salt: as needed
  • 1 kg lamb beef, or horse meat
  • 1 onion sliced
  • 1 carrot
  • 2 potatoes
  • Salt black pepper, turmeric, coriander seeds: as needed

Method
 

  1. In a large bowl, mix flour, egg, and salt. Gradually add water to form a soft dough. Knead for 10 minutes, cover, and rest for 15 minutes.
  2. Slice onion and fry in a pan until golden; set aside.
  3. Boil the meat in a pot with 3 cups of water, salt, pepper, and turmeric until tender. Separately boil potatoes and carrot.
  4. Roll out the dough, cut into squares/diamonds, and cook in salted water or broth for 10 minutes.
  5. Place noodles on a serving platter. Top with cooked meat, carrots, and potatoes. Add fried onions and garnish with herbs. Serve hot with broth on the side.
