Boyoz Recipe: Traditional Izmir Bread

Boyoz is a traditional Turkish pastry from Izmir with a flaky, layered texture. It is usually served with boiled eggs and Turkish tea for breakfast.

Ingredients
  

  • 500 g all-purpose flour
  • 250 ml lukewarm water
  • 200 g butter softened
  • 2 tbsp vegetable oil or olive oil
  • 1 tbsp salt
  • Optional 2 tbsp tahini for richer flavor

Method
 

  1. Sift the flour twice and mix with salt and oil.
  2. Gradually add water until you form a smooth dough.
  3. Knead for 10 minutes, shape into a ball, and cover for 25 minutes.
  4. Divide into 4 balls, rest for 10 minutes.
  5. Roll each ball thin, spread butter, and layer them together.
  6. Stretch the dough thin again, roll into a spiral, and press lightly.
  7. Preheat oven to 180°C (350°F) and bake for 20–25 minutes until golden.
  8. Serve warm with tea and boiled eggs.
