  • 2 cups plain Greek yogurt
  • 1 large English cucumber grated
  • 2 garlic cloves minced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon fresh mint chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼-½ cup cold water optional, for a thinner consistency
  • Optional Garnish
  • Extra virgin olive oil
  • Dried mint
  • Fresh dill
  • Paprika
  • Cucumber slices

Method
 

  1. Grate the cucumber and gently squeeze out any excess liquid.
  2. In a large bowl, combine the yogurt, garlic, salt, and black pepper until smooth.
  3. Stir in the grated cucumber, chopped dill, and fresh mint.
  4. Add cold water a little at a time if you prefer a thinner, soup-like consistency.
  5. Cover and refrigerate for 30 minutes to allow the flavors to develop.
  6. Drizzle with olive oil and garnish with fresh herbs before serving.
