Ingredients
  

  • 5 cups rice soaked 1-3 hours
  • 500 g lamb or beef cut into medium pieces
  • 1 onion chopped
  • Salt pepper, turmeric: As needed
  • 3 tablespoons tomato paste
  • 4 cups water
  • 2 tablespoons vegetable oil or lamb tail fat for authentic flavor
  • Optional: carrots potatoes, peas
  • Fresh herbs parsley or dill for garnish

Method
 

  1. Soak the rice in water with a pinch of salt for 1-3 hours.
  2. Chop the onion and fry in oil (or lamb fat) until golden. Add the meat, spices, and tomato paste. Pour water, cover, and cook for 30 minutes until meat is tender.
  3. Drain the rice and add it to the meat mixture. Ensure there is just enough liquid so the rice cooks properly.
  4. Bring to a boil, then reduce heat to low, cover, and cook until the rice is soft and water is absorbed.
  5. Optional: Add vegetables like carrots or potatoes for extra nutrition.
  6. Garnish with fresh herbs before serving.
