Ingredients
  

  • 1 cup red lentils
  • ¼ cup fine bulgur
  • ¼ cup white rice
  • 1 medium onion finely chopped
  • 2 garlic cloves minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Turkish red pepper paste optional
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 6 cups vegetable or chicken broth
  • 2 teaspoons dried mint
  • 1 teaspoon sweet paprika
  • ½ teaspoon red pepper flakes
  • ½ teaspoon ground black pepper
  • Salt to taste
  • Lemon wedges for serving

Method

  2. Rinse the lentils, rice, and bulgur. Finely chop the onion and mince the garlic.

  4. Heat the butter and olive oil. Sauté the onion until soft, then add the garlic, tomato paste, and pepper paste. Cook for 2–3 minutes.

  6. Stir in the lentils, rice, and bulgur until coated with the tomato mixture.

  8. Pour in the broth and add the mint, paprika, pepper flakes, black pepper, and salt. Simmer for 30–35 minutes until the lentils are tender.
