Prepare the Peaches
Wash the peaches, remove the pits, and dice them into small pieces. If using frozen peaches, thaw completely and drain excess liquid before adding them to the batter.
Mix the Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
Mix the Wet Ingredients
In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
Make the Pancake Batter
Pour the wet ingredients into the dry ingredients. Stir gently until just combined. A few small lumps are normal and help create softer, fluffier pancakes. Avoid overmixing.
Add the Peaches
Gently fold the diced peaches into the batter until evenly distributed.
Cook the Peach Pancakes
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
Pour about ¼ cup of batter onto the pan for each pancake. Cook until bubbles appear on the surface and the edges begin to look set, about 2–3 minutes.
Flip carefully and cook for another 1-2 minutes until golden brown.
Serve warm with your favorite toppings.
