Ingredients
  

  • 3 eggs
  • 300 g dates pitted
  • 150 g unsalted butter
  • 3 walnuts roughly chopped
  • Ground cinnamon to taste
  • Optional: pistachios almonds, or sesame seeds for garnish

Method
 

  1. Melt butter in a non-stick pan over medium heat.
  2. Add pitted dates and stir for a few minutes until slightly soft.
  3. Mix in chopped walnuts. Avoid grinding too finely.
  4. Crack the eggs directly into the pan over the date mixture and stir gently.
  5. Add a pinch of cinnamon and cook until the eggs are fully set.
  6. Serve warm with fresh bread and optional nuts or sesame seeds.
