Kachi: Traditional Iranian Healing Dessert

Ingredients
  

  • 2 cups wheat flour
  • 1 cup sugar or honey/date syrup/grape juice as a substitute
  • 4 cups water
  • 100 g butter
  • 1/4 cup oil
  • Melted saffron: As needed
  • 1/2 cup rose water
  • Cardamom powder: As needed
  • Cinnamon powder: As needed
  • Almonds walnuts, or sesame: For garnish

Method
 

  1. In a saucepan, boil water and sugar until the sugar dissolves. Add saffron and rose water, then set aside.
  2. Roast flour in a pan until slightly golden (be careful not to burn). Add butter and oil, stirring well. Add cardamom and cinnamon powder.
  3. Slowly add the sugar syrup into the flour mixture while stirring continuously.
  4. Reduce heat to very low, cover with a lid, and let it cook for 10 minutes.
  5. Garnish with nuts, sesame, or a sprinkle of cinnamon before serving.
