Ingredients
  

  • 375 g all-purpose flour
  • 240-300 ml warm water
  • 1 teaspoon salt
  • 4 tablespoons vegetable oil
  • 1 medium onion finely chopped (optional)
  • 2 tablespoons fresh parsley chopped (optional)
  • ½ teaspoon black pepper
  • 3-4 tablespoons vegetable oil for frying

Method
 

  1. Mix the flour and salt in a bowl. Gradually add warm water and knead until a smooth, firm dough forms.
  2. Cover the dough and let it rest for 30 minutes.
  3. Divide the dough into four equal portions and roll each portion into a thin sheet.
  4. Brush each sheet with vegetable oil. Add the optional onion, parsley, and black pepper.
  5. Roll the dough into a cylinder, coil it into a spiral, and let it rest for 10 minutes.
  6. Gently flatten each coil and roll it into a round flatbread.
  7. Heat a little oil in a frying pan over medium heat.
  8. Cook each Katlama for 3-4 minutes per side until golden brown and crispy.
  9. Serve warm for the best texture and flavor.
