Ingredients
  

  • 1 meter Sheep intestine
  • 250 g Sheep liver
  • 250 g Sheep heart
  • 250 g Mutton offal
  • 2 Onions
  • 4 cloves Garlic
  • 1 Green pepper
  • 2 Tomatoes
  • Salt black pepper, turmeric, coriander seeds (as needed)
  • 250 g Parsley and mint
  • 1 cup Water
  • 1/2 pint Olive oil

Method
 

  1. Clean the Intestine
  2. Wash the sheep intestine thoroughly and soak it in salt water for 3-4 hours. Rinse again and remove excess fat.
  3. Prepare the Filling
  4. Chop the liver, heart, and offal into medium-sized pieces. Dice the onion, garlic, pepper, and herbs. Mix all ingredients well.
  5. Stuff the Intestine
  6. Carefully fill the intestine with the mixture, then roll it around a skewer in strips.
  7. Grill the Kokoretsi
  8. Place the skewers over charcoal or in the oven. Grill slowly until the meat is fully cooked and golden.
  9. Prepare the Sauce (Optional)
  10. Chop the tomatoes and simmer them with spices for 30 minutes. Pour the sauce over the grilled Kokoretsi before serving.
