Koloocheh (Persian Date-Filled Sweet Bread)

Ingredients
  

  • 3 cups 400 g white pastry flour
  • 1 cup lukewarm milk
  • ½ cup sugar
  • 1 egg
  • 75 g butter softened
  • 1 tbsp instant yeast
  • ¼ tsp vanilla
  • ¼ tsp salt
  • Filling:
  • 250 g pitted dates
  • ½ cup chopped walnuts optional
  • 1 tsp cinnamon
  • ½ tsp ground cardamom
  • 1 tbsp butter
  • Egg Wash:
  • 1 egg yolk
  • 1 tbsp milk
  • A little brewed saffron optional

Method
 

  1. Activate Yeast
  2. Mix yeast and 1 tablespoon sugar with lukewarm milk. Let sit for 10 minutes until foamy.
  3. Prepare Dough
  4. In a bowl, mix egg, remaining sugar, vanilla, and butter. Add yeast mixture. Gradually add flour and salt. Knead for about 10 minutes until soft and elastic.
  5. First Rise
  6. Place dough in a greased bowl. Cover and let rise in a warm place for 1 hour until doubled in size.
  7. Prepare Filling
  8. Soften dates with butter in a pan. Add cinnamon, cardamom, and walnuts. Let cool.
  9. Shape Koloocheh
  10. Divide dough into 12 pieces. Flatten each piece, add date filling, seal, and gently flatten. Decorate with a fork or stamp.
  11. Egg Wash & Bake
  12. Brush with egg yolk mixture. Bake in a preheated oven at 180°C (350°F) for 15-20 minutes until golden.
  13. Cool & Serve
  14. Allow to cool slightly before serving.
