Kotlet Recipe: Traditional Iranian Cutlet

Ingredients
  

  • 500 g minced meat beef, lamb, or low-fat meat
  • 3 medium potatoes
  • 1 medium onion
  • 2 eggs
  • 1 tbsp breadcrumbs
  • 1 tbsp chopped parsley optional
  • Salt turmeric, pepper-to taste

Method
 

  1. Peel and grate potatoes and onion, then squeeze to remove excess water.
  2. Mix grated potato and onion with eggs, spices, breadcrumbs, and optional parsley. Mix thoroughly and let rest for 2-3 minutes.
  3. Shape the mixture into oval or round patties (about the size of a tangerine). Moisten hands slightly with water to prevent sticking.
  4. Heat oil in a pan and fry cutlets for 2-3 minutes on each side until golden and crispy.
  5. Serve hot with fresh vegetables, bread, or rice.
