Prepare the dough:
Mix flour, salt, yeast, sugar, water, and olive oil. Knead until smooth and elastic. Let the dough rest covered for about 1 hour until slightly risen.
Prepare the topping:
Mix minced meat, onion, tomato, garlic, pastes, parsley, and spices in a bowl until combined but not overmixed.
Shape the dough:
Divide dough into 6 equal parts and roll each piece into a thin round (a few millimeters thick).
Add the topping:
Spread a thin layer of the meat mixture evenly over each dough sheet.
Bake:
Place in a preheated oven (250 C/ 480 F) for 6-8 minutes, until the edges are golden and crisp.
Serve:
Squeeze lemon juice on top, add fresh parsley, onions, or tomatoes, and roll it up to enjoy warm.
