Lavashak (Persian Fruit Leather)

Lavashak is a traditional Persian snack made from dried fruit puree, tangy and slightly sweet, similar to fruit leather. This easy homemade recipe lets you enjoy the taste of summer fruits all year round.

Ingredients
  

  • 2 lbs 900 g sour fruits (plums, pomegranates, or sour cherries)
  • ΒΌ cup sugar adjust to taste
  • 1 tablespoon lemon juice
  • Water as needed
  • Optional: pinch of salt or cinnamon for extra flavor

Method
 

  1. Prepare the Fruit: Wash the fruits, remove pits/seeds, and cut them into smaller pieces.
  2. Cook the Fruit: Place fruit in a pot with a little water. Cook over medium heat for 20-30 minutes until soft.
  3. Puree and Strain: Blend into a smooth puree, then strain through a fine sieve or cheesecloth to remove skins and seeds.
  4. Flavor the Mixture: Add sugar and lemon juice. Adjust flavor to your preference.
  5. Thicken the Puree: Return mixture to the pot, simmer on low heat until it reaches a jam-like consistency.
  6. Spread the Mixture: Line a baking tray with parchment paper, spread the puree evenly .
  7. Drying Method:
  8. Sun-dry: 2-3 days in direct sunlight until dry but still flexible.
  9. Oven-dry: 6-8 hours at 140
  10. Cut and Store: Peel off the sheet, cut into strips or squares, and store in an airtight container.
