  • Dough
  • 4 cups white flour
  • 1.5 cups warm water
  • 2 tablespoons sugar
  • 1 tablespoon yeast
  • 1 teaspoon salt
  • 3 tablespoons oil or butter
  • Coating
  • 1/2 cup grape molasses or honey
  • 1/2 cup water
  • 1 cup roasted sesame seeds

  2. Prepare the Dough (10 minutes)
  3. Mix warm water, sugar, and yeast. Let rest 10 minutes until bubbly.
  4. Add flour and salt; knead until smooth.
  5. Add oil and keep kneading for a soft, elastic dough.
  6. Cover and let rise for 1 hour.
  7. Shape the Simit (15 minutes)
  8. Divide dough into 6 portions.
  9. Roll each into two long ropes.
  10. Twist the ropes together, then form a ring shape.
  11. Prepare the Coating (1 minute)
  12. Mix molasses and water.
  13. Dip each ring into the mixture.
  14. Coat generously with sesame seeds.
  15. Bake (20-25 minutes)
  16. Preheat oven to 220 C (430 F).
  17. Bake until golden and crispy.
