Sucuklu Yumurta Recipe (Turkish Eggs with Sucuk)

Ingredients
  

  • 150 g 5.3 oz Turkish sucuk, sliced
  • 3 large eggs
  • 1 teaspoon unsalted butter optional
  • Freshly ground black pepper to taste
  • Turkish red pepper flakes Pul Biber, optional
  • Fresh parsley chopped, for garnish

Method
 

  1. Step 1:
  2. Slice the sucuk into ¼ inch (6 mm) pieces.
  3. Step 2:
  4. Heat a skillet over medium heat. Add butter if needed, although traditional sucuk usually releases enough fat on its own.
  5. Step 3:
  6. Cook the sucuk slices for 2-3 minutes on each side until slightly crispy and the flavorful oils are released.
  7. Step 4:
  8. Reduce heat to medium-low and crack the eggs between the sucuk slices. Season with black pepper.
  9. Step 5:
  10. Cover the skillet and cook for 3-5 minutes until the egg whites are set and the yolks reach your preferred texture.
  11. Step 6:
  12. Garnish with parsley and Pul Biber. Serve immediately with warm bread.
