Ingredients
  

  • 400 g fresh lean beef or chicken
  • 6-8 tbsp oil or mix of oil + butter
  • 1 large finely chopped white onion
  • 1 tbsp sumac
  • 2 chopped tomatoes
  • Fresh parsley as needed
  • Salt and black pepper as needed
  • 1 tsp paprika or sweet pepper powder
  • 4 pieces lavash or yufka bread
  • Fresh lemon for serving

Method
 

  1. Chop the meat finely for authentic texture.
  2. Half-cook meat in a small saucepan with ½ cup water and season lightly.
  3. In a large pan, heat oil and fry the meat with spices until oily and shiny.
  4. Mix chopped onion, sumac, parsley, and black pepper separately.
  5. Warm lavash bread and place hot meat on it.
  6. Add chopped tomatoes and onion mixture. Squeeze fresh lemon, add optional Irv pepper, and roll the sandwich.
