Prepare the Egg Whites:
Separate the egg whites and place them in a clean bowl. Beat with an electric mixer for about 3–5 minutes until soft peaks form.
Add the Sugar:
Gradually add the sugar while continuing to beat until the mixture becomes shiny, white, and stiff.
Mix in Butter and Coconut:
Pour in the melted butter, vanilla, and lemon juice. Then gradually add the coconut powder and gently fold with a spatula until evenly combined.
Chill the Dough:
Cover the mixture and refrigerate for about 15 minutes to let it firm up.
Preheat and Prepare:
Preheat your oven to 170 C. Line a baking tray with parchment paper.
Shape and Bake:
Using a spoon or piping bag, place small portions of dough onto the tray, leaving some space between each.
Bake for 10-12 minutes or until lightly golden on top.
Cool and Decorate:
Let the cookies cool completely before removing them from the tray.
Decorate with melted chocolate, pistachio powder, or almond flakes if desired.
