Shirini Nargili (Coconut Sweets)

Ingredients
  

  • 1 cup coconut powder
  • 3/4 cup white sugar
  • 3 egg whites
  • 30 g unsalted butter melted
  • 1 tsp vanilla extract
  • Few drops of lemon juice to remove egg smell

Method
 

  1. Prepare the Egg Whites:
  2. Separate the egg whites and place them in a clean bowl. Beat with an electric mixer for about 3–5 minutes until soft peaks form.
  3. Add the Sugar:
  4. Gradually add the sugar while continuing to beat until the mixture becomes shiny, white, and stiff.
  5. Mix in Butter and Coconut:
  6. Pour in the melted butter, vanilla, and lemon juice. Then gradually add the coconut powder and gently fold with a spatula until evenly combined.
  7. Chill the Dough:
  8. Cover the mixture and refrigerate for about 15 minutes to let it firm up.
  9. Preheat and Prepare:
  10. Preheat your oven to 170 C. Line a baking tray with parchment paper.
  11. Shape and Bake:
  12. Using a spoon or piping bag, place small portions of dough onto the tray, leaving some space between each.
  13. Bake for 10-12 minutes or until lightly golden on top.
  14. Cool and Decorate:
  15. Let the cookies cool completely before removing them from the tray.
  16. Decorate with melted chocolate, pistachio powder, or almond flakes if desired.
